The renovation is intended not only to modernize the design, but also to strengthen the quality of service and the perception of the brand. Ress says, “The image of a brand is the sum of all associations, experiences, and memories of the product.”
Ress also reflects on the challenges facing the wine industry, such as declining wine consumption in key markets and consumer purchasing power. However, he also sees opportunities in these developments, particularly in the trend toward less but higher-quality enjoyment. As an eco-certified premium business, Balthasar Ress feels well positioned for this change.
Finally, Ress highlights the synergy effects in Mauergasse, where four more wine bars have opened since the first one, and praises the cooperation among competitors, which benefits everyone. “I was genuinely delighted about every single competitor because I realized that every additional wine bar could contribute to positioning Mauergasse as a ‘wine and gourmet mile’—which benefits us all,” emphasizes Ress.
