The first marc brandy from Sylt grapes

The wine estate Balthasar Ress from Hattenheim launches today the first in-house marc brandy "Finest marc from Solaris grapes from Keitum". With only 96 bottles produced, the Sylt pomace is very rare and celebrates its debut as the first pomace from the famous island. For its production, only Solaris pomace (pressed grapes) from the Keitum vineyard were processed. Since 2009, the Balthasar Ress winery has been cultivating and managing the parcel of Germany's northernmost vineyard.

"I am very pleased that we were able to carry out this project for the first time ever due to the rather large amount of pomace accrued from last year's harvest on Sylt. This means that, in addition to our Söl'ring Solaris Sekt extra brut, we now have the second product from our company that can rightly and proudly claim our favorite island as a traceable provenance," says Christian Ress about the Sylt marc.

The grapes grow in a small plot in Keitum. Nestled in a small depression and surrounded on three sides by tall vegetation, the vines are protected from the stormy North Sea winds. The microclimate ensures optimal development of the precocious grapes. After the Solaris berries have gone through the pressing process, they are crushed into barrels to initiate fermentation. Finally, the pomace mash is distilled by Hubertus Vallendar, one of the most renowned master distillers in all of Germany. Hubertus has already demonstrated his skill in refining the "Balthasar's Eleven London Dry Gin".

The "Feinster Trester" presents itself clearly in the glass. Notes of currant, white flowers and summer rain. Delicate and gentle, it opens on the palate, bringing out spicy notes of marc and exotic fruit. The alcohol is not in the foreground, but pleasantly softly wraps around the flavor. A true palate pleaser.

The Sylter Trester will be available immediately both in the Balthasar Ress online store at the web address www.balthasar-ress.de/shop and in the Balthasar Ress wine bars & vinotheques in Hattenheim, Wiesbaden and Frankfurt for a short time, as long as it is available.
