Harvest report Sylt 2020

Unfortunately, this year the harvest could not take place as usual with our vine tenants on Sylt. Nevertheless, we can look back on a successful wine year on Sylt. The development of the grapes was a lot slower compared to last year. The spring was quite cool. As a result, the vines sprouted late, around mid-May, and the grape harvest on Sylt began later than in the Rheingau.

Flowering began on July 10, 2020. In mid-September, our team set out for Sylt. On site, the harvest began on September 15. With the help of many hardworking hands, they finished within a few hours and had consistently healthy grapes in the vats. These grapes were harvested at 80 degrees Oechsle and 10 grams of acidity. With these values they form the optimal basis for the sparkling wine base. Since our sparkling wines undergo two fermentations, one from must to wine and the other from wine to sparkling wine, the grapes should have a lower sweetness. This prevents excessive alcohol content and the sparkling wine retains its typical effervescence.

The grapes were then transported overnight to Hattenheim in a refrigerated truck so that they could be processed directly the next morning, thus ensuring the best quality. The musts are now fully fermented and are still in our stainless steel tanks. Afterwards, the base wines are filled into the sparkling wine bottle with a special sparkling wine yeast, riddling yeast as well as a sweet reserve in order to initiate the second fermentation. In this bottle, the Sölring sparkling wine is then aged on the yeast for at least 14 months to develop its full potential and a creamy melt. In 2022, this sparkling wine will then be ready to be disgorged and tasted by you.
